Huehuetenango is the highest non-volcanic region of Guatemala, and is one of the best in the country for coffee production. The local Cuchumatanes Mountains are the highest non-volcanic massif in Central America, making this area one of three coffee regions where the trees grow on non-volcanic soil.
It is worth noting that the region borders Mexico, so dry and hot winds from the Mexican plains protect the region from frost. This allows coffee to grow at high altitudes.
Because Huetenango is a remote and inaccessible region, there are almost no centralized processing stations. Farmers process their own coffee, and the rivers allow them to place a processing station anywhere. The berries are dried in the sun and then sold.
